Free hand baking – no recipe to talk about.   Challah type of dough filled with poppy seeds, walnuts and dates. Decoration… don’t know what came over me.

Paneer or cottage cheese would do just as well. Honey and walnuts can make any breakfast irresistible.

School Lunches

Looks like I finally cracked it! Cookie dough! Use it as cement to glue together as many goodies as you dare. I tried half a dozen recipes, with moderated success. They were all good, but never great. Biggest problem – too crumbly. Not a handy thing for kids during lunch break to go around the school with handful of bits of what was supposed to be a convenient snack. Out of desperation I tried to experiment with basic cookie dough. Result far exceeded my hopes.

homemade granola bars  Why not ready made?  Control of cause. I can cut on sugar at least by half. Make a fruit&nut combination to cater for some fussy eaters. Warning! Not suitable for the fancy wrappings lovers.

  • 1 cup butter
  • 1/2 cup  sugar
  • 2 egg
  • 2,5 cups  flour
  • 1 cup ground almonds

That’s what a good rest does to me…  Saturday I slept, Sunday I cooked with joy and ease .  Feel rested and happy to start my Monday. Wish you all the same.

From breakfast to supper

Slice of Heaven

Slice of a Lemon TartDough:

  • 300g of soft butter
  • 300g of sour cream
  • 300g of flour

Filling:

  • 300g of sugar
  • 2 lemons

Dough is a straightforward affair, filling  slightly more interesting. Lemons left in a boiled water for 10-15 minuets, chopped into chunks to pick out the seeds, then blended into pulp skin and all. In addition to the sugar I put 2Ts of tapioca flour – makes the filling less runny when cool. I do not favour a soggy crust, to brush the bottom part with the egg normally helps. But this time I used leftover almond meal. Lemons retain some bitterness, and it adds the interest to that otherwise unpretentious dessert.

Oriental meal

Cannot pinpoint the exact cuisine, but Eastern inspired that’s for sure. White radish salad with cashew and chives, kimchi,  Stir fried beef and veg, rice of course.

I eat kimchi once every four-five years. This winter I crave it, I dream of eat… Is it a climate change? Am I getting old?

Oriental meal

Baked Apples

Nothing beats the smell of cinammon baked apples. Add nuts and honey and you get a perfect autumn dessert.

Ingridients:
  • 250g  cold butter (grated)
  • 200g  yogurt
  • 200g  cream
  • 800-900g plain flour (one third can be substituted for selfraising)
  • A pinch of salt
Filling
  • 400g walnuts
  • 100gr sugar
  • 2TS honey
  • 3TS  grated coconut
  • 1ts  cinammon

Let the doug rest for about an hour in the fridge.

Roast Beef Sandwiches

Snacks, school lunches, quick bites before sport… I often stuck for the ideas, unless those meals between the meals are planed ahead. Why not create a snacks library the same way I do right now with the dinners/lunches/breakfasts. Same simple idea – no wasting  creative energy on meals.  A little effort to make my own cookbook might save a lot of time in the future, I hope. Plus, family can have an access to my catalog.
